3 T oregano, dried

2 T thyme, dried

2 T sumac, ground

2 T hulled white sesame seeds, toasted

1 tsp high-quality salt

1/2 tsp lemon zest, powdered

1/4 tsp cinnamon, ground

1/2 tsp red pepper flakes (optional)


  1. Lightly toast the sesame seeds lightly in a dry pan over medium heat until golden brown and fragrant (or purchase toasted sesame seeds).
  2. Allow sesame seeds to cool completely before combining with the remaining ingredients.
  3. Secure the lid and give the jar a good shake to blend the ingredients.


Makes just over 1/2 cup of dry mix.

Store spice blend in a sealed jar or container in a cool, dry place.
